8 gingernut snap biscuits
8 Chocolate ripple biscuits
110g Butter (melted)

Cake Filling
500g Ricotta Cheese
250g Marscapone Cheese
Caster Sugar
rind and juice of one lemon
3 eggs
40g Plain Flour
100mL Cream

Blueberry Sauce
300g blueberries
200mL Vintage port (or other sticky…)
60g sugar
Vanilla Bean
Cinammon Stick
squeeze lemon juice
