Sticky Date Pudding

  1. Put dates, bi-carb soda in a bowl and cover in the boiling water
  2. Cream butter and sugar and add eggs and vanilla to the creamed butter, beating well
  3. Fold the flour into the batter mix and then add the date mix to it
  4. Place in a greased oven tray (or pudding dish) and bake for 40 mins at 180degC
  5. Put butter and brown sugar into a heavy bottomed saucepan
  6. Heat, and stir until sugar dissolves
  7. Add cream and beat well, then mix the brandy and vinegar through
  8. Serve the pudding with sauce and ice-cream (or custard)
