Quince Paste

  1. Peel the quinces, and put the peel with 500mL of water in a saucepan and bring to boil, leaving to simmer for 20 mins
  2. Cut the fruit into pieces
  3. Put the pieces of fruit in large saucepan and heat, allowing the fruit to sweat without catching on the bottom then add water to just below where it would cover the quinces
  4. Strain the peel/water solution and add the flavoured water to the fruit saucepan
  5. Add the juice of 2 lemons and stir
  6. Bring to the boil, and leave to stew for 2 hours, stirring so as to ensure the bottom of the pan doesn’t catch
  7. Add the sugar and stir it in, leave to simmer for 20 mins
  8. The mixture should have reduced to about 1/2 of the original size if not bring to boil and stew/simmer again
  9. Pour into a baking/lamington tray and place in the oven at 90C for a couple of hours, or until set
  10. Carve and eat with lots of cheese
