Gingerbread

  1. Combine water, brown sugars, golden syrup and spices in a medium sized saucepan, stir and bring to heat
  2. Add butter and continue stirring until fully dissolved
  3. Turn out into a large bowl and allow to cool to just over room temperature
  4. Add bi-carb soda and mix well – the mixture should more than double in size
  5. Add flour, mix through, turn out and knead
  6. Roll out to your preferred thickness, cut shapes, and place on greaseproof paper in oven trays
  7. Cook in oven at 170-180 deg C for 10 mins or until browned/golden
  8. Allow to sit, and decorate if wished (use a white butter icing, or similar that will set hard)
