Osso Bucco

  1. Put about 2tbsp flour in a pan, season with salt and pepper, and coat the osso bucco evenly in the mix
  2. In bottom of stove-top/oven proof pot add olive oil, onion, garlic and cook until browned
  3. Place osso bucco in the bottom on the onion mix, add peeled tomatoes, carrot, celery, stock and wine
  4. Add bay leaves, lemon zest and cover
  5. Bring to the boil, season to taste with salt, pepper and parsley
  6. Place in oven at 180 C and cook for 2 hours
  7. Check the seasoning, and alter to taste if needed. Garnish with parsley
