Christmas Pudding

  1. Combine dried fruit and brandy in a bowl and soak overnight
  2. Combine butter, suet, flours spices and sugar in a bowl, mix through and add the soaked fruit mixture
  3. Add the apple, carrot, orange and lemon folding into the combined mixture
  4. Fold in the treacle and eggs, ensuring that it’s mixed well.
  5. Steam for 8 hours in a well greased pudding dish and turn out hang in calico for 3 months
  6. To reheat steam for 1 hour in calico bag inside pudding dish/bowl so as not to burn the sugar
  7. Serve with brandy custard, cream and/or ice cream
