Honey Ginger Tea Cake

250g honey
120mL tea (black)
50mL milk
100g brown sugar
220g butter
220g plain flour
100g SR flour
1/2 tsp bi carb soda
1 tbsp crushed ginger
1/2 tbsp ground ginger
1 tsp mixed spice

Carrot and Walnut Cake

450g butter (melted)
500g plain flour
175g brown sugar
175g caster sugar
4 eggs
5 carrots (grated)
2 tsp bi carb soda
2 tsp baking powder
2 tsp cinnamon (ground)
1 tsp cloves (ground)
125g walnuts (crushed, dry roasted)
