Gingerbread

100g brown sugar
100g dark brown sugar
180g golden syrup
1 tbsp ground ginger
3-5 tbsp crushed ginger (depending on how “ginger” you want)
2 tbsp cinnamon
1 tsp ground cloves
250g butter
1 tsp bi-carb soda
550-600g plain flour
